1 head cauliflower
1 small onion
3c. chicken broth
3 slices of thick bacon, diced
3 tbsp. butter
1/2c. heavy cream
1 tsp. salt
1/2 tsp. pepper Shredded cheddar cheese
Separate florets from the stem, cut into small pieces, and boil in the chicken broth til tender. Fry bacon and onion in fry pan til bacon is done. Put about 2 c. cauliflower into food processor with a little bit of the broth, add butter, cream, and pulse til creamy.
Combine fried bacon & onion with the bacon grease and the pulsed cauliflower with the rest of the whole cauliflower. Put shredded cheese on top in each bowl, micro-wave 1 1/2 minutes until cheese is melted. Salt and pepper to taste.
