KAHLUA, LOW CARB - From: Rani Merens

2 cups 80-proof vodka
2 cups water
1 1/2 tablespoons of vanilla extract
1 1/2 tablespoons instant coffee
8-10 packets of Equal (I used half Equal/half Splenda)

Combine 1st 4 ingredients in a covered saucepan.
Cook until all ingredients are dissolved.  
Remove from heat and leave covered (or alcohol will boil away).
While still warm, add sweetner.
This is very good straight or with some heavy cream, or toss in a blender with some crushed ice and cream.
(Note from Rani: I think I'd add a teaspoon or two of not/Sugar to this, to make it more syrupy.)
