Spinach and Bacon Quiche

2 tbsp's chopped onion ( I use more, til I think it "looks" right)--1.726
3 tbsp's divided butter
1 10 oz pkg frozen spinach ( thawed)--11.36
3 eggs--1.83
1 1/2 cups heavy cream--9.96
1/2 tsp salt
1/2 tsp pepper
1/2 tsp nutmeg
10 - 12 slices cooked & crumbled bacon
2 cups Swiss or Mozzarella cheese (divided in half) Swiss--7.3/ moz--4.96

By these calculations-- Using Swiss cheese--32.176 Total carbs with 8.88 for fiber (23.29)-- Using Moz. cheese-- 29.836 (21.036 after fiber)

Heat oven to 375.  Spray 9" pie plate with nonstick spray and set aside.  Melt 2 tbsp's butter in pan  over med heat.  Add onions and sauté till limp.  Squeeze as much water as possible out of spinach and add to onions.  Cook until heated and any extra water evaporates.  Mean while beat eggs lightly and add cream, salt, pepper and nutmeg.  Whisk to mix and add spinach and onions to egg mixture to combine.  Mix in bacon & 1/3 of cheese.  Pour into pie dish.  Top with remaining cheese and dot with remaining butter.  Bake 25 - 30 minutes or until golden brown.  Cool 5 minutes and serve.
