1/4 cup protein powder (I used vanilla whey powder - 0.3 carbs)
2 tablespoons oil (0)
2 tablespoons brown sugar SugarTwin (1.62)
1 egg -- beaten (0.6)
1 teaspoon baking powder (1.27)
1 teaspoon vanilla extract (imitation with alcohol) (0.10)
1 teaspoon pumpkin pie spice mix (1.18)
1/4 teaspoon salt substitute -- gives potassium (0)
1 small grated carrot (5.07 - 1.5 fiber = 3.57)
1/2 cup water
Mix the above, let sit for a few minutes to thicken if necessary. Spoon into 6 buttered non-stick muffin tins. Bake 25-30 minutes at 350 degrees.
Total carbs = 23.84 or 3.97 per muffin Using fiber subtraction (flax & carrot): total = 9.92 or 1.65 per muffin
