Ingredients:
8 oz cream cheese, softened
One large egg
1 1/2 tb vanilla
4 packets Equal
4 tb Peanut butter
Preparing:
Mix all Ingredients and blend for about 5 minutes. Line muffin pan with paper muffin cups,
fill with mixture and bake in 350 degree oven for about 20 minutes. Makes 6 big muffins. 2.5 carbs each.
I think if you wanted to adapt it as a no-bake fudge, you could leave out the egg, and substitute about 1/2 package of vanilla sugar free pudding. Mix all of it together and chill until firm.
