1 pound cheddar cheese -- grated
1 pound Colby cheese -- grated
1 pound (2 pkgs) cream cheese -- softened
2 tablespoons sour cream
1/8 teaspoon cayenne pepper
1/8 teaspoon garlic powder
1 tablespoon chopped green onions
1 cup walnuts -- finely crushed
Mix the two grated cheeses with the softened cream cheese. Add the seasonings and the green onions form into a log and roll in the crushed walnuts. Wrap log tightly in plastic wrap and chill well. To serve cut into thin slices (about 1 tbsp. each). Serve with allowed vegetables or breads, crackers, etc. 0.1 grams fiber per serving. Estimated 24 slices (1 Tbsp. per serving) 1.1 grams of carbohydrates per serving.
You can also use pecans instead of walnuts and adjust pepper to your taste buds. You can also make balls instead of logs, or any shape you want.
