1/3 cup flour
1/3 cup shortening
1 chicken- cut up (any other meat you desire-- shrimp, ham, sausage)
1 small onion- finely chopped
scallions - chopped
parsley, salt, pepper - to taste
Cooked in a heavy skillet or pot until the flour gets good and brown (roux)
Add 3 quarts of water while still hot in skillet, bring to a low boil, Add 1 chicken cut up, salt and pepper to taste, dash of cayenne,. 1 small onion, finely chopped, scallions, chopped, and parsley, chopped Simmer for 1 1/2 hours until chicken falls off the bones. Remove bones and serve over faux rice. You can add shrimp, sausages or ham as you like.
