3 1/2 cups cauliflower -- raw, grated
3 each green onions -- chopped
4 cloves garlic -- minced
2 tablespoons soy sauce, low sodium -- or more to taste
1/2 teaspoon garlic salt -- or to taste
3 each eggs -- beaten
1 tablespoon canola oil
In large pan or wok heat 2 tsp. oil and fry minced garlic and white part of onion for 1 min. Add grated cauliflower and fry for about 5 min. stirring constantly. Add soy sauce. green onion tops (and meat if adding) and stir until mixed. Push mixture to side of pan and add 1 tsp. oil and scramble eggs until done but moist. Stir eggs into veggie mix. and remove from heat. 1/3 of recipe is 10 grams fat, 13 grams net carbs., and 12 gr. protein. Made with 3.4 cup Eggbeater substituted for egg it is 5 grams fat, 13 grams net carbs, and 10.7 gr. protein. If meat is added then add the additional grams of protein as appropriate for meat used.
