3 1/2 cups cauliflower -- raw, grated
3 each green onions -- chopped
4 cloves garlic -- minced
1/3 cup salsa
1 teaspoon cumin powder
1/4 teaspoon coriander
1/2 cup cilantro -- fresh, chopped
2 oz cheddar cheese, lowfat -- shredded
1 teaspoon olive oil
Saute garlic and white part of onion in oil for one minute. Add cauliflower and saute for 5 minutes until tender. Add cumin, coriander, salsa and chopped cilantro. Top with grated cheese and allow to melt. Serve immediately.
