10 oz. package frozen chopped spinach
2 T. butter
1 1/2 tsp. flour (This can be omitted and you can substitute some cream cheese for thickening, though it isn't really necessary.)
1/2 c. heavy cream
1/4 tsp. salt
Dash pepper
Dash nutmeg
Dash Cayenne pepper
Cook the spinach following the directions on the package. Drain and squeeze
all the liquid from the spinach when it's done.
Melt the butter in a saucepan over medium heat. Be careful not to burn. Add the flour to the melted butter and stir until smooth. Add the cream and heat for 2 to 3 minutes or until the sauce thickens. Stir constantly so the sauce does not burn.
Add the spinach, salt, pepper, nutmeg and cayenne. Cook for 3 to 4 minutes
stirring often. Serve hot.
Serves 4 as a side dish.
